Description
Hummus is comfort made creamy—smooth chickpeas blended with nutty tahini, bright lemon, and just enough garlic to keep things interesting. Ingredients
- 1 15oz can of chickpeas
- 3 cloves of garlic
- 2 tbsp olive oil
- 1/4 cup tahini
- 1/2 lemon
- 1 tsp cumin
- 1/2 tsp + pinch of paprika
Steps
- Rinse and boil chickpeas for 5 minutes. Reserve 1/3 cup of water from boiled chickpeas.
- Using a food processor, mince garlic while chickpeas boil. Allow them at least 5 minutes to oxygenate for ultimate health benefits.
- Drain chickpeas and add to food processor. Add 1 tbsp olive oil, tahini, cumin, and 1/2 tsp of paprika to food processor. Juice 1/2 lemon and add to food processor. Blend into a smooth paste.
- Add chickpea water 1 tbsp at a time until desired smoothness is reached.
- Scrape hummus from food processor into bowl and top with remaining olive oil and paprika.
- Store remaining hummus covered in fridge. Keeps for up to 3 days.
